Spring tuna salad with asparagus and white beans

This nourishing salad is easy to make and filled with plenty of food beneficial to an athletes diet. Tinned tuna is a strong source of protein which is also full of omega-3 fatty acids. Also the use of cannellini beans adds extra antioxidising elements to the salad, ensuring it is a well balanced meal. This recipe can easily be altered to suit your tastes; adding extra vegetables such as leafy greens or cucumber will increase the flavour and still make a super-healthy meal. 

Asparagus is a key ingredient to the recipe, it’s rich in vitamins and fibre, low in fat and is extremely tasty! Moreover, you could add some cooked wholemeal pasta to make it a more filling meal for dinner times. It can be made ahead of time to take with you on the go, meaning you can still eat healthy when you’re busy. 

Ingredients to make for 4 people: 

  • 1 large bunch asparagus
  • 2 x 200g cans yellowfin tuna steaks in water, drained
  • 2 x 400g cans cannellini beans in water, drained
  • 1 red onion, very finely chopped
  • 2 tbsp capers
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2 tbsp tarragon, finely chopped
